Located at the rearmost part, the round is subdivided into 3 sections: the nut, the interior and the exterior of the round. These pieces are more or less tender and less tasty. It therefore lends itself well to tartars given its dense consistency and mild taste. Otherwise, this cut is ideal as a stew or roast cube or for making delicious jerky.
