A rib-eye steak is simply a sirloin steak that hasn't been trimmed, meaning the rib bone hasn't been removed. When cooked properly, the bone helps release even more flavor into the meat. This gives you the tender appearance of a sirloin steak with the explosion of flavor that the bone provides during cooking.
